Microgreens are 4-40X more nutrient dense than their adult counterparts!
This is a claim that gets tossed around a lot on the interwebs, but it turns out to actually be true! Not only are microgreens absolutely delicious, numerous studies have also shown that microgreens contain much higher levels of vitamins, minerals, and antioxidants, by weight, than mature vegtables.
